1 c. diced bacon, uncooked
1 c. celery, chopped
1/2 c. green pepper, diced
3 tsp. salt
1 c. onion, chopped
4 T. oil or bacon drippings
3 T. flour
2/3 c. sugar
1/3 c. vinegar
1 2/3 c. water
8 c. potatoes, cooked and diced

Directions:
Directions:
Fry bacon, drain. Put bacon aside. In same skillet cook celery and onions in 4 T. oil. In medium bowl; mix flour, sugar, salt and vinegar. Add water, then add to celery and onions and bring to a boil. Pour over potatoes, bacon and green pepper in 3 quart greased baking dish. Cover and bake at 350 F. oven for 30 minutes.
