2 Potatoes shredded
Cheddar Cheese
Butter
Hot Peppers (opt.)
Chopped Meat (leftovers work well)

Directions:
Directions:
Preheat oven to 450. Pre-bake or microwave the potatoes (with the skins on). Cut the potatoes in half length-wise & place in a cake pan. With a fork fluff the meat part of the potatoes. Top with butter. Place in oven for 10 minutes. Remove and add the chopped meat & stir into the potatoes. Return to the oven for 10 more minutes. Remove and add the cheese & return to oven until cheese is melted. Good served with sour cream or ranch dressing.

For extra zest, slice the hot peppers in half and place one on each potato before adding the shredded cheese.
