"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Great Grilled Potatoes, by Linda Poe, is from The Poe Family Collection,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
Prepare the grill or preheat oven to 450º. Fold the foil in half, shiny side up. Open the foil and place the bacon on half of the foil. Layer the potatoes on top of the bacon, then layer the onion on top f the potatoes. Add salt and pepper to taste (Nature’s Seasoning by Morton’s is recommended). Fold the foil over and crimp the edges tightly to seal. Place on rack in oven or on grill with the bacon side down. Cook 90 minutes or until the potatoes are tender.
