6 medium potatoes
3 hard boiled eggs, chopped
1 hard boiled egg, sliced
4 stalks chopped celery
1/2 to 1 cup chopped onion or chopped green onions
Plenty of mayonnaise
Salt
White pepper
Paprika (optional)

Directions:
Directions:
Cook unpeeled potatoes in boiling water until fork-tender. Peel and cube while still warm. Add celery, onion, chopped eggs, salt and pepper to taste. Toss with mayonnaise--more than you think you need because potatoes will absorb it. Add salt if needed. Transfer to serving dish, garnish with sliced egg and sprinkle with paprika. Refrigerate at least two hours; tastes even better the next day.
