3 lb chuck roast
3 large peeled potatoes cut in chunks
5-6 peeled carrots cut in 2 inch chunks
6 small peeled onions left whole
1 Tbs oil

For Gravy: Flour, water, salt, pepper

Directions:
In a large frying pan coated with 1 Tbs oil, heat oil until hot, add chuck roast to pan and brown meat on all sides over medium heat. Salt and pepper while browning meat. Once meat is brown/seared, put meat in a medium sized roaster pan and cover. Bake at 350 degrees for 45-60 minutes until brown on bottom of roaster pan. Remove pan and add 1 cup of water. Place potatoes, carrots, and onions around the meat. Salt and pepper all vegetables and place lid back on the roaster pan. Bake another 45-60 minutes until vegetables are done. Remove roaster pan from oven and remove vegetables first and place in a bowl. Remove chuck roast and place it on a platter. Place the roasting pan over the stove with burners off. Add 1/4 cup of flour to the juice to make a paste and add 1 cup of cold water to the paste to make the mixture smooth. Add another cup of cold water and turn burners on medium heat. Stir continuously and add water if needed for desired consistency. After gravy thickens, taste and add salt if needed. When the gravy is done, pour the gravy over the bowl of vegetables and serve with the chuck roast. Enjoy!
