"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Chicken or Turkey Rice Soup, by Norma Jean, is from Family Favorites ,

families or individuals create heirloom cookbook treasures.
4 cups of diced cooked chicken or turkey 2 qts chicken broth or 4 cubes of chicken bullion to 1 quart of water to make your own broth. 2 medium onions diced small 1 cup of diced celery 1/4 tsp pepper 1 cup of uncooked rice
Add all ingredients in a large sauce pan. Let it come to a boil and then reduce heat and simmer for 45 minutes to one hour. After soup is done, you may want to taste it to see if it needs more salt. If so, add more bullion cubes for a more salty flavor.
