1 package yellow cake mix
15 oz can pineapple tidbits
3 oz low fat cream cheese (softened)
3 oz instant vanilla pudding mix
1 cup skim milk
1/3 cup applesauce
8 oz Cool Whip Lite
1/8 cup sliced almonds (toasted)
1/8 cup coconut (toasted)

Directions:
Directions:
Follow directions for yellow cake mix on box, except substitute equal parts of applesauce for oil and use liquid from pineapple and water to equal liquid called for on box.

Bake in oven at 350 degrees for time called for on box in a 9x13 greased and floured pan. Cool completely and cut cake into squares before frosting.

Topping: Combine cream cheese, pudding mix and milk in a bowl. Mix and fold-in pineapple tidbits: spread on top of cooled cake.

Frost over topping with Cool Whip and sprinkle with toasted almonds and toasted coconut on top.

Refrigerate several hours before serving. Enjoy!
