3 eggs (separated)
1/2 c oil
2 c buttermilk
2 c whole wheat flour
1 T sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt

Directions:
Directions:
Blend the egg yolks, oil and buttermilk in a bowl. Add the dry ingredients. Mix only until the batter is smooth. Beat the egg whites until they will stand in peaks and fold in gently. Bake in a hot waffle iron.
