4 c. coarsely chopped apples
2 c. sugar
2 eggs
1/2 c. cooking oil
2 tsp. vanilla extract
2 c. sifted flour
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
1 c. chopped walnuts

Directions:
Directions:
Pre-heat oven to 350. Combine apples and sugar. Let stand. Beat eggs slightly, add oil and vanilla. Sift flour with baking soda, cinnamon and salt. Stir into egg mixture alternately with the apple-sugar mixture. Stir in walnuts. Pour into a greased and floured 13x9x2 pan for about 1 hr., or until cake springs back when touched. When cake is done, let stand until cool and turn out onto serving plate and frost with a mocha frosting or plain powdered sugar. Decorate with walnut halves.
