1 15 oz can of pink salmon
10 saltine crackers squares, crunched up with hands
1 egg
salt and pepper
1/2 cup flour (made need a little less, add gradually)

Directions:
Directions:
Combine all ingredients together (including the juice from the canned salmon) in a mixing bowl. You may need more or less flour depending on how wet it is. Must not be too wet so you can shape it into patties. Heat oil on the stove and fry patties several minutes on each side until golden brown.

This is my all time favorite, comfort food meal. Anytime I was not feeling well or needed a pick-me-up, my mom made this for me. It tasted even more fabulous when home for weekends from college or Dallas. Since my dad and I were both pretty picky eaters in our younger days, mom told me Memow used to make this for dad when he was younger and he loved it too. Tastes wonderful dipped in ketchup!
