1/2 cup chopped onion
1 T. olive oil
1 can (15 ounces) pumpkin puree
2 cups low-sodium chicken broth
1 cup water
1/4 cup peanut butter
1/4 tsp. curry powder
1/4 tsp. salt

Directions:
Directions:
Cook onion in hot olive oil on medium heat for 4 minutes, or until tender. Stir in pumpkin puree, low-sodium chicken broth, water, peanut butter, curry powder, and salt; heat through.
