1 boneless pork roast (butt, about 3 pounds)
1 bag of dried pinto beans
1 onion
1/2 cup chili powder
Garlic, salt and pepper to taste

Directions:
Directions:
Place all in a Dutch oven and cover with water. bring to a boil and turn down to simmer for about 6 hours, but keep adding water if needed. ( You can move to a crock pot at this point) When tender, discard fat and bones, if any. You put this "stew" over fritos, and top with lettuce, tomatoes, onions, peppers, cheese, salsa, etc.
