1 tablespoon light butter
1 cup onion, chopped
2 cloves garlic
10 oz spinach (frozen, chopped, thawed, squeezed)
8 oz can sliced water chestnuts
14 oz can artichoke hearts, (w/o oil)
8 oz carton low fat sour cream
8 oz 1/3 less fat cream cheese, softened
1 cup low fat shredded cheddar cheese
1 teaspoon hot pepper sauce
1/2 teaspoon salt
1/4 teaspoon pepper
cooking spray

Directions:
Directions:
Melt butter. Saute onion in non-stick skillet. Add onion and garlic. Saute 5 minutes. Add spinach, water chestnuts, and artichokes. Saute 2 minutes. Add cream cheese, sour cream, 1/2 of cheddar cheese, pepper sauce, salt and pepper. Spoon into coated 11x7 dish. Top with remaining cheddar cheese. Bake 350 degrees for 18029 minutes until heated.
