2 to 3 lbs. pork loin or center cut
Salt
Pepper
Onions, sliced
Garlic, to taste
Potatoes (peeled and cut in chunks)

Directions:
Directions:
Put pork in a baking dish, surrounded by onion, garlic, and potatoes. Season all with salt and pepper. Cover and cook at 375 for 45 minutes per pound of meat or until tender. Use drippings for making gravy, if desired.

Sunday dinner almost always was a roast of some sort. Mom most often added carrots as well as potatoes. We used the leftovers for pork sandwiches on rye bread with Gulden's mustard with a green pepper (salted) on the side. CMB
