1 lg. Potato, chopped
1 T. Butter
1 Leek (white part only), chopped
Half and Half
1 Onion, chopped
Salt and Pepper to taste
1 stalk Celery with leaves, chopped

Directions:
Directions:
Put the chopped vegetables in a saucepan and barely cover with cold water. Add the butter, salt, and pepper and cook until tender. Mash the veggies with a potato masher until chunky. Add the half and half until the mixture reaches the desired consistency. Heat until very hot. Garnish with celery leaves.

I usually serve this with toasted rolls or toasted buttered hot dog buns. Apples and cheddar cheese are a good dessert with this dish.
