1/2 cup butter warm and bubbling, not brown
2 egg yolks in blender
2 tbsp. lemon juice
1/4 tsp. salt
Pinch of pepper

Directions:
Directions:
Flick blender on and off quickly two times with yolks, lemon juice, salt, and pepper. Remove cover, turn motor on high. Add butter gradually until mixture thickens. If it becomes too thick, add cold water.
