1/3 cup finely chopped onion
6 tbsp. butter
2¼ cups uncooked rice
4½ cups boiling chicken stock
Salt
Pepper

Directions:
Directions:
Preheat oven to 375º. Sauté onion in butter until tender and transparent. Add rice and cook over low heat, stir occasionally until opaque. Add stock, season with salt and pepper. Cover and bake for 5 minutes. Reduce oven temperature to 350º and bake for 15-20 minutes.

For mushroom rice pilaf, sauté 1/2 lb. sliced mushrooms in 1/4 cup butter and add before baking.
