Russet potatoes
1-2 tbsp. white vinegar
1/4 to 1/2 cup minced onion
Hard boiled egg
Salt
Pepper
1/2 cup mayonnaise

Directions:
Directions:
Boil Russet potatoes (1 potato per person) until soft. Drain and let cool. While still warm, add white vinegar, onion, chopped hard boiled egg, salt and pepper. Mix in mayo. Add more until desired consistency. Taste and add more vinegar, salt, and pepper to taste.
