4 slices dry bread
1 lb. ground beef
2 eggs
1/2 cup grated parmesan
2 tbsp. chopped parsley
1 clove garlic, minced
1 tsp. crushed oregano
1 tsp. salt
Dash pepper
Olive oil for frying

Directions:
Directions:
Soak bread in water 2-3 minutes, then squeeze out moisture. Combine soaked bread and the remaining ingredients, mixing well. Form into small balls (about 20). Brown slowly in 2 tbsp. hot olive oil. Add to sauce, cook 30 minutes.

I found this recipe in a magazine many years ago. It's still my favorite. Use your favorite marinara sauce with these meatballs. I'll sometimes add some browned Italian sausage as well. Great for Italian grinders or on pasta. CMB
