1 lbs. potatoes
1 onion
1 egg
Salt
Pepper
2 tbsp. flour
Vegetable oil for frying
Sour cream (optional)
Jelly (optional)

Directions:
Directions:
Peel the potatoes and onion, and grate both finely. Remove the juice. Mix in the egg, lightly beaten, and season well. Add flour and stir until the mixture holds its shape. Pour enough oil into a large frying pan to cover the bottom of it. When it is hot, drop spoonfuls of the potato mixture and flatten them so they are very thin. Fry until brown. Serve right from the pan with sour cream or jelly.

This was a favorite on "meatless" Fridays when we were kids. We spread jelly on them and ate with delight. Now, they've become part of Christmas Eve dinner. CMB
