1/2 cup onion
1/2 cup celery
1/2 cup green pepper
2 cloves garlic (minced)
2 cans (15 oz. each) red beans, drained
1/2 lb. fully cooked fat low fat turkey sausage, cut into 1/4 inch slices (or kielbasa)
1 8 oz. can tomato sauce
1 tsp. Worcestershire sauce
1/4 tsp. ground red pepper
1/4 tsp. hot pepper sauce
3 cups hot cooked rice

Spray Dutch oven with cooking spray or 1 tbsp. oil. Heat until very hot. Add onion, celery, green pepper, and garlic. Cook 2 to 3 minutes. Add beans, sausage, tomato sauce, Worcestershire sauce, red pepper, and pepper sauce. Reduce heat. Simmer 15 minutes. Serve with rice and pepper sauce, and chopped onion, cilantro and parsley as sides.
