3/4 sliced fresh mushrooms
1 can (14 oz.) tomatoes, cut up
1/2 cup chopped green pepper
1/4 cup chopped onion
3 tbsp. dry red wine
1 clove garlic, minced
1/2 tsp. dried oregano
1/2 tsp. salt
A dash of pepper
2 whole chicken breasts (halved lengthwise)
2 tsp. cornstarch
2 tbsp. cold water
Fresh mushroom crowns

Combine sliced mushrooms, tomatoes, green peppers, onions, wine, garlic, oregano, salt and pepper in a skillet. Place chicken breasts atop. Sprinkle lightly with more salt. Bring to a boil. Reduce heat and simmer for 25 minutes or until done. Remove chicken to warm platter. Sprinkle with paprika. Combine cornstarch and water. Stir in skillet. Cook and stir until thick and bubbly. Garnish with mushrooms. Serve with pasta or rice.
