3 eggs, divided
1 tsp. vanilla
3 tbsp. melted butter
1/2 cup flour
1/2 cup sugar
1/2 cup milk

Directions:
Directions:
In a small mixer bowl, beat together 3 egg yolks and 1 tsp .vanilla. Stir in 3 tbsp. melted butter or margarine. Stir together 1/2 cup flour and 1/2 cup sugar. Add to egg yolk mixture alternatively with 1/2 cup milk, beating at each addition. In another bowl, beat 3 egg whites until stiff peaks form. Gently fold batter mixture into whites. Brush skillet with cooking oil and heat. Cook crepes.
