3 eggs (separated)
1` cup sugar
1 teaspoon vanilla
Pinch of salt
About 2 cups of mild
2 cups cooked rice

Directions:
Directions:
Mix egg yolks, sugar, vanilla, salt, milk, and rice. Bake in a 350 degree oblong dish until set like custard. Beat egg whites, adding 2 tablespoons sugar and spoon on top of custard. Return to oven until brown.

Variation of recipe is to skip Meringue but add toasted bread pieces on top of cooked custard and return to oven to brown. Cinnamon can also be added with toasted bread. The recipe did ;not say skip the meringue, but it sounds logical. Maybe we should try it with the toasted bread, cinnamon and meringue.
