1/3 c. chopped toasted almonds
3 T. melted butter
1 1/3 c. finely crushed vanilla wafers
1 t. almond extract
1 - 12oz. jar apricot preserves
3 pints vanilla ice cream, softened
whipped cream (optional)

Directions:
Directions:
Mix vanilla wafer crumbs, almonds, extract and butter. Put layer of crumbs in bottom of 9 inch. sq. pan. that has been buttered. Then layer of ice cream, and layer of apricot preserves, sprinkle with crumbs. Repeat layers, ending with crumbs on top. Freeze several hours until ice cream is firm. Cut in squares and top with whipped cream.
