Chicken thighs - 4-6 pcs
Olive oil - 1-2 tbsp
Salsa - 1cup
Rice - 1 cup
Chicken broth/stock - 2 cups
Cheddar cheese - 1 cup grated
Onion - 1 medium diced
Garlic - 2-3 cloves pressed or diced

Directions:
Directions:
Saute the chicken until browned in oil with onions and garlic.
Add rice, chicken stock, and salsa
Cover and let simmer until rice is done (approx 30 mins).
Top with cheese and let melt - serve
