9 inch unbaked pie shell
1/4 c. flour
1 3/4 c. sugar
1/2 tsp. salt
1/2 c. butter melted
3 eggs beaten
1/2 c. buttermilk
1 tsp. vanilla
1 tsp. lemon extract
sprinkling of grated nutmeg

Directions:
Directions:
Combine flour, sugar and salt. Add melted butter and beaten eggs.(Can use mixer...I hand whip) Add buttermilk and flavorings. Bake 350 for 45-50 minutes.

A great recipe from the famous Excelsior House in Jefferson. When I think pies..I have countless memories of Mama baking pies for Claude Jr.'s restaurant when I was a little girl. Pies would line all cabinets and tables in our kitchen. She was superb at it and still is. She has always loved this pie recipe. I also have many memories of us walking up and down our country road picking berries of all sorts or plums for those great pies, cobblers and wonderful jellies.
