1 5-6 lb. beef brisket
Celery salt
Onion salt
Garlic salt
Liquid smoke

Directions:
Directions:
Select well trimmed beef brisket. Three days before serving sprinkle liberally with celery salt, onion salt, garlic salt and liquid smoke. Cover tightly and refrigerate overnight (can be wrapped in aluminum foil.)

Bake (still wrapped in foil) in 275 oven five hours. Cool to room temperature. Cover and refrigerate over night.

Next day remove fat and discard. Slice meat. Arrange in a serving casserole. Save drippings to mix with equal portions of "Open Pit" Hickory Smoke flavor barbecue sauce, or if preferred, use dripping without barbecue sauce over top and cover with aluminum foil. Bake 30-45 minutes in 350
oven.
