Graham Cracker Crust:
1/3 box graham crackers
1/4 lb. butter
2 T sugar
Pie Filling:
8 oz. cream cheese
1/2 c. sugar
Pinch of salt
2 eggs
1/2 c. milk
1/2 tsp. vanilla
Few drops of lemon juice
Topping:
1 small can pineapple
1 T. cornstarch
1/3 c. sugar
Yellow food coloring

Directions:
Directions:
Crust: Mix well and flatten in pie pan Bake for a few minutes; chill.
Filling: Blend cream cheese, sugar and salt. Add eggs, one at a time, mixing well. Add milk gradually, mixing well. Add vanilla and lemon juice. Pour in top of double boiler; stir, while cooking until filling thickens. Cool thoroughly and pour onto crust.
Topping: Mix cornstarch and sugar; blend in pineapple so that there are no lumps. Add coloring, if desired. Cool well before topping pie. Refrigerate.
