1/2 lb Ground Beef
1/2 lb Italian Sausage
2 1/2 C shredded low-moisture part-skim Mozzarella Cheese
15 oz part skim Ricotta Cheese
1/2 C Parmesan Cheese
1/4 C chopped Parsley
1 Egg, lightly beaten
26 oz Spaghetti Sauce
1 C Water
12 Lasagna Noodles, uncooked

Heat oven to 350. Brown meat in large skillet on medium-high heat. Meanwhile, mix 1 1/4 cups mozzarella, ricotta cheese, 1/4 cup Parmesan, parsley and egg until well blended; set aside. Drain meat; return to skillet. Stir in spaghetti sauce. Add water to empty sauce jar; cover with lid and shake well. Add to meat mixture; stir until well blended. Spread 1 cup sauce on bottom of 13X9 inch baking dish; top with layer of 3 lasagna noodles, 1/3 of the ricotta cheese mixture and 1 cup of sauce. Repeat layers twice. Top with remaining noodles, sauce and cheese. Cover with foil. Bake 1 hour, removing foil after 45 minutes. Let stand 15 minutes before cutting to serve.

You do not have to buy the no-cook lasagna noodles - the regular ones work great. If you want a vegetarian version replace the beef/sausage with 10 oz of chopped spinach. Thaw spinach; squeeze out excess liquid. Prepare as directed, covering each ricotta layer with 1/3 of the spinach. I normally buy spaghetti sauce with mushrooms.
