2 lbs stew meat , cut 1 1/2 inch cubes
2 medium onions, cut in eighths
3 celery stalks cut in thin slices
6 carrots quartered
1 cup tomato juice
1/3 cup quick cooking tapioca
1/2 cup water
1 tbsp sugar
1 tbsp salt
2medium potatoes cut in slices, 1/4 inch thick

Directions:
Directions:
combine beef, onions, celery, carrots in 2 1/2 quart casserole, combine tomato juice, tapioca, sugar, salt and water, pour over meat and vegetables and stir well, cover and bake in 300 oven about 2 1/2 hours, add potatoes and cook 1 hour longer, stir occasionally
