1/2 c. sliced almonds
5 T. sugar
1 bag fresh spinach
1 red onion, thinly sliced
11 oz. can mandarin oranges
1/4 c. chopped celery
1/2 c. sugar or 1/4 c. honey
2/3 c. vegetable oil
1 tsp. prepared mustard
1/4 c. vinegar
1 tsp. salt
1 T. poppy seeds

Heat sugar on stove top over medium heat. Add almonds to caramelize, watching carefully. Whisk together dressing ingredients. Toss spinach, onion, oranges, and celery in a bowl. Drizzle salad dressing to taste on top. Top with toasted almonds.
