Merkins melting chocolate - I use 2:1 ratio of dark to milk chocolate.

Melt in double boiler with barely hot water. This will take about 30 minutes. Be patient - it's worth it.

Stir until a nice shine appears.

At this point, you can dip anything you like in it.

What I make with this melted chocolate:

Chocolate Covered Pretzels; Turtles;
Chocolate Covered Cherries,
Chocolate mint covered Oreo's;
Coconut Haystacks;
Macadamia Nuts; almonds; peanuts; raisins.

Trail mix bark - pour chocolate onto a parchment lined baking sheet; top with trail mix of your choosing; add craisins; tap pan so the mix will stick. Cool and break into pieces.

Peanut Butter Pies - Coat ritz crackers with peanut butter, then dip in chocolate. Yum!
