Layer Cookies Recipe

1 cup sifted flour
1/2 cup powdered sugar
1/2 cup butter
sift together flour and sugar
cut in butter until mixture is crumbly
press into bottom of 9x13x2 inch pan
Bake @ 350 for 10 minutes
2 eggs
1/2 cup brown sugar
1 tsp vanilla
2 ( 1oz square) unsweetened chocolate, melted and cooled
1 tbsp flour
1/2 tsp baking powder
1/2 tsp salt
1/2 cup flaked coconut
1 cup chopped nuts

beat eggs, add brown sugar and beat until fluffy
stir in vanilla and chocolate, stir flour, baking powder, and salt into egg mixture, add coconut and nuts, mix well
spread over first layer
Bake @ 350 for 25 minutes---cool frost if desired

1/4 cup butter
2 cups of powdered sugar
1 1/2 tbsp milk
1/2 tsp vanilla
1/4 tsp peppermint
2-3 drops red food coloring
