Ground Beef
1 egg per 1 lb of meat
Salt & Pepper
Garlic, 2 cloves per 1 lb of meat, pressed or chopped
Parsley to taste, dried
Oregano to taste, dried
1/4 cup crushed Saltines per 1 lb of meat

Directions:
Directions:
Combine all ingredients. If you can't see the spices, add more! Shape into meatballs. Brown on all sides. Add your favorite marinara sauce and simmer over medium-low heat for 2 hours.

Adapted from the Santoro family recipe. If you like your meatballs spicy, add crushed red chili pepper. This also makes an amazing meatloaf - I just omit the oregano.
