1 package boneless, skinless chicken breasts, trimmed into nuggets

1 c flour
2 c saltine cracker meal
1/2 c Parmesan cheese
1 tsp salt
1/4 tsp pepper

2 eggs
1/4 c milk

vegetable oil

Directions:
Directions:
Combine dry ingredients in pie pan

Combine wet ingredients in bowl. Add Chicken to wet ingredients. Allow to sit several minutes, to several hours (at your convenience).

Dip chicken into the crumb mixture. Put on plate; allow chicken to set 15-30 minutes before frying.

Coat pan with oil.

Brown chicken; transfer to serving tray and keep warm in the oven until all nuggets are done.
