2 Tb. olive oil
1 Tb. minced shallot
1 tsp. Dijon mustard
1 tsp honey
8 cups chopped romaine lettuce
1 cup halved grape tomatoes
1/4 cup slivered almonds, toasted
Salt to taste

Directions:

Whisk vinegar, oil, shallots, Dijon and honey together in a large bowl. Add remaining ingredients and toss to coat.
