2-1/2 lb.Yukon gold potatoes, peeled and cubed
1/2 stick unsalted butter, cubed
1/2 cup buttermilk
Minced zest of 1 lemon
Salt and white pepper to taste

Directions:
Directions:
Boil potatoes in salted water in a large saucepan until tender when pierced, 15 minutes. Drain potatoes, reserving 1 cup of the cooking water if you are making gravy. Return potatoes to the saucepan and cook over medium heat for 1 minute to remove excess moisture.
Off heat, mash potatoes with a masher or handmixer. Stir in butter until melted, then gradually add buttermilk. Finish with zest, salt and white pepper.
