3/4 c. self rising cornmeal mix 1/4 c. all purpose flour 1/2 tsp. soda 1/2 tsp. baking powder 1/2 tsp. salt 1 TBSP sugar 1 egg 1 c. buttermilk 2 TBSP oil 1 TBSP oil (for skillet)
Heat oven top 450. Mix all ingredients except the 1 TBSP oil for skillet. Heat 8" iron skillet with 1 TBSP oil on stove top. When hot, add cornbread mixture to hot skillet. Place in oven and cook for 10-15 minutes.
