1 medium onion, chopped
2 tbsp butter
4 potatoes, peeled and cubed
4 c chicken stock
1/2 c half and half
salt and pepper to taste

shredded cheddar
spring onions, diced
bacon bits

Directions:
Directions:
Saute onion in butter till translucent; add potatoes, stock and pepper. Simmer till tender.

Blend with immersion blender until smooth.

Add enough milk to make a nice consistency. Season with salt to taste.

Top with onions, cheddar and bacon
