2 tbsp instant coffee
1 tbsp hot water
8 oz of cream cheese
1/2 c splenda
1 tsp vanilla
1/2 tsp cinnamon
1 1/2 cups of whipped cream (cool whip holds up best)
12 Mr. Christie Ginger snaps

Directions:
Directions:
Take instant coffee and dissolve into hot water; let cool. Beat cream cheese and splenda together. Add vanilla, cinnamon and coffee mixture. Fold in whip cream.

Put ginger snaps in paper cups in muffin tins. Top the mixture and freeze for a couple of hours. Thaw 10 minutes before serving. You can top this with melted chocolate and/or fresh raspberries.
