1 c. sifted enriched flour
4 tsp. baking powder
1 tsp. salt
1/4 c. sugar
2 eggs
1 c. milk
1/4 c.oil or melted fat
1 c. enriched yellow cornmeal

Directions:
Directions:
Preheat oven to 400. Grease the bottom of an 8 - or 9 - inch square baking pan. Sift together the flour, baking powder, salt and sugar. In a medium-sized bowl, beat the eggs, milk and oil or melted fat until blended. Add flour mixture and cornmeal and stir until batter is just smooth. Pour into greased pan and bake about 25-30 minutes or until done. Serve hot.
