3 frozen boneless, skinless chicken thighs
1/2 cup diced onion
1 bag frozen veggies, Asian style
2 T. oil
1/4 cup peanuts
1 box Thai Kitchen stir-fry rice noodles, any flavor (available in the foreign food aisle)
Thai sweet chili sauce (also available in the foreign food aisle)
Hot sauce

Directions:

Partially thaw the chicken in the microwave. (It's easier to cut up if it's still slightly frozen.) Slice the chicken into thin strips. Heat the oil in a large frying pan or wok. Add chicken, frozen vegetables, and onion, and stir-fry until chicken is no longer pink.
Bring 4 cups of water to a boil in a sauce pan. Turn off heat, and soak noodles in hot water for 5 minutes. Drain and rinse with cold water.
Crush peanuts in a food processor.
Add noodles, sauce packet, and peanuts to the chicken and veggies. Mix it all together and cook for 3-4 minutes. Add hot sauce and sweet chili sauce to taste.
