1 lb ground beef
1 onion chopped
1 can mild enchilada sauce (or spicier if you like it that way)
2 cans cream of mushroom soup
1 pkg tortillas (flour, corn, or wheat)
Cheddar cheese, grated

Directions:
Directions:
Brown the meat and onion. Drain grease. Add sauce and soup. Simmer for 15 minutes.
Line a 9x13 pan with of the tortillas. Cover with meat mixture. Top with cheese. Repeat layers.
Bake at 350 for 20 minutes.

You can use two 8x8 dishes. Bake one and freeze the other for later. It freezes great for up to three months!
