2 lbs. red potatoes, cut into 3/4-inch cubes (about 6 cups)
1 cup Mayonnaise
2 Tbsp. white vinegar or apple cider vinegar
1-1/2 tsp. salt
1 tsp. sugar
1/4 tsp. ground black pepper
1/2 cup thinly sliced celery
1/2 cup chopped onion
2 hard-cooked eggs, chopped

Directions:

1. In 4-quart saucepan, cover potatoes with water. Bring to a boil over high heat. Reduce heat to low and simmer uncovered 10 minutes or until potatoes are tender; drain and cool slightly.

2. In large bowl, combine Mayonnaise, vinegar, salt, sugar and pepper.

3. Add remaining ingredients; toss well. Serve chilled
