6 Yukon gold potatoes, washed, cut into 1/8-inch round slices
1/4 cup olive oil
2 tablespoons herb mix, recipe follows
Salt and fresh ground black pepper
1 tablespoon butter

Herb Mix:
2 tablespoons chopped fresh thyme leaves
2 tablespoons chopped fresh rosemary
1/4 cup Italian flat-leaf parsley, chopped

Directions:
Directions:
In a large mixing bowl, toss the sliced potatoes with the olive oil and 2 tablespoons of herb mix. Season with salt and black pepper. Place potatoes on a baking tray.

Roast potatoes in 400 degree preheated oven for 15 minutes, until the edges just start to turn golden.

Remove from oven and place potatoes into a glass bowl. While still warm, toss butter with the potatoes. Cover with foil and keep warm until ready to serve.
