4 tbsp olive oil, 1 tbsp dry basil, 4 cloves garlic, minced
¾ tsp red pepper flakes.
Simmer all ingredients on very low heat till garlic softens and flavors blend. (I usually do this ahead and let it sit – it helps the flavor infuse into the oil).

Pizza Dough: 2 c warm water, ¼ c olive oil, 2 tsp instant yeast, 2 tsp salt, 1 tbsp sugar, 4-5 c bread flour

Fontina Cheese and Mozzarella Cheese, grated

With the regular beater bar, combine 2 c flour, salt, sugar, and instant yeast into mixing bowl. Mix till combined.

Add warm water and oil and mix until incorporated. Allow to rest 5-10 minutes.

Change to dough hook and continue mixing in flour until a nice firm dough forms (this should be about 2-3 more cups). It will pull aside from the bowl and ‘knead’ itself on the hook when there’s enough flour. Transfer to a bowl sprayed with PAM, cover and let rise until doubled (2 hrs).

Punch down dough and form into 2 balls; let rest a few minutes.

Roll dough out (you may need to let it rest a few minutes if it keeps ‘shrinking’ up) onto counter sprayed with PAM. Either put it onto a pizza pan or a cookie sheet lined with parchment paper.

Top with olive oil mixture, and grated Italian cheeses.
Bake in a 500 degree preheated oven on the bottom rack until golden brown.
