6 c chicken broth
5 large potatoes diced and cooked
1 can mushrooms
1 can cream of celery soup
1 med onion, diced
1/2 lb bacon
1 tsp salt
1/2 tsp pepper
1 tsp basil
pinch of garlic powder (or 1 clove minced)
1/2 c sour cream
1 8oz pkg shredded cheddar cheese

Directions:
Directions:
Cook bacon pieces until crisp. Saute onion and garlic until tender. Add mushrooms. Stir in 3 T flour, add salt, basil, pepper, mix well, add broth gradually and bring to a boil. take 1/2 of the potatoes and puree or mash up some then add to pot along with rest of potatoes and sour cream. Add one can of cream of celery soup and cheese. Simmer until cheese melts. May garnish with more bacon bits, cheese, and green onion.

This is my winter comfort food. My Mother, Evelyn, used to make a big pot of potato soup in the winter months when we were small and we would make bread and have this soup for suppers.
I had a couple of different recipes that I received from some of my friends and I have kind of combined the two and made my own. This is my version of those and my Mothers.
