Cream Puffs Recipe

Heat to rolling boil:
1 cup water
1/2 cup butter
stir in all at once
1 cup flour
stir vigorously over low heat until mixture leaves the pan and forms a ball(about 1 minute)
remove form heat, beat in thoroughly one at a time, 4 eggs, beat until smooth and velvety
drop on ungeased cookie sheet

Bake @ 450 for 15 minutes, then @325 for 30-40
more and cool
split and scoop out center of cream puffs

Custard Filling for puffs:
1/2 cup of sugar
1/2 tsp salt
1/3 cup of flour
stir in:
2 cups of cold milk
cook over medium heat stirring until it boils
boil 1 minute, remove from heat, stir little over half of mixture into 2 beaten eggs
blend mixture with mixture in pan, bring just to boiling point, cool, add 2 tsp vanilla
fill cream puffs
