2 medium plum tomatoes, seeded and finely chopped
1/4 c. finely chopped red onion
1 or 2 cloves garlic, minced
2 Tbsp. lime juice
1 Tbsp. olive oil
1/4 tsp. salt
1/8 tsp. ground black pepper
2 ripe avocados, seeded, peeled, and coarsely mashed
1/4 c snipped fresh cilantro
Tortilla chips

Directions:

In a bowl combine tomatoes, red onion, garlic, lime juice, olive oil, salt and black pepper. Gently stir in avocados and cilantro. Cover with plastic wrap. Chill for up to 1 hour. Serve with tortilla chips.
